Dum Aaloo



Ingredients

  • Baby potatoes : 16-18 (Boiled ,peeled ,pricked with fork and then deep fried)
  • Tomato puree : 4 cups roughly chopped tomatoes boiled in 3 cups of water till they cook.Make a fine paste when cooled down completely
  • Roughly Chopped Onions  : 2 cups
  • Green Chillies  : 4
  • Garlic cloves  : 10
  • Cashews : 1/4 cup
  • Fennel Seeds (Badishep) : 2 tsp
  • Turmeric powder : ½ tsp
  • Kashmiri Red Chillies (Broken) : 6
  • Cummin Seeds : 1 tsp
  • Kasuri  Methi : 1tsp
  • Cardamon :2
  • Cinnamon : 2 sticks
  • Cloves : 4
  • Amul Fresh Cream : 2 tbsp
  • Salt : as reqd
  • Sugar : ½ tsp
  • Oil : 2 tbsp


Preparation :

  • Make a fine paste of onions, green chillies, garlic, cashews ,fennel seeds, cumin seeds, turmeric, kashmiri  chillies .
  • Keep the tomato puree and potatoes ready as given
  • Heat the oil in a pan. Saute cardamom, cinnamon and cloves for a minute.
  • Add the mixture / paste of onions etc and sauté for another 5 mins.
  • Add the tomoto puree and boil it for another 3 mins.Later add 2 tsp of amul cream and kasuri methi along with salt and sugar.
  • Let it boil few more mins on low heat stirring continuously.
  • Garnish it with coriander
  • Serve it with hot roti or nan.

Banana Bread


Ingredients:
2 cups all purpose flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 tsp salt
Banana purée ( I took 2 over ripe bananas )
1 cup milk
1/2 cup oil
2 tsp apple cider
1 tbsp vanilla extract
1 1/2 cups choco chips

Method:
* preheat oven at 350 * F & grease loaf pan

* In a large bowl whisk together flour, sugar, baking soda, baking powder , salt & cinnamon

* In a separate bowl whisk milk, oil, apple cider, vanilla extract, purée 

* Mix all dry and wet ingredients. Once all combined well add choco chips into the mix...

* leave the mix for about 30 mins...
And bake it for 70 mins.

Note:Take a bowl add choco chips and 1 tsp all purpose flour together gentle so that it not set down into the mix....


Bharli Bhendi

Traditional Bharli bhendi... 

Ingredients:
250 gms of Bhindi (Ladies Finger/Okra)
1 medium size oninon finely chopped

Stuffing:
1 Green Chilli, deseeded and chopped
Ginger garlic paste 2 spoons
1/4 cup Gram Flour (बेसन)
2 tablespoons Groundnuts, powder (दाण्याचे  कूट)
1 teaspoon Sesame Seeds
1 tablespoon Cumin-Coriander Powder
1/4 teaspoon Turmeric Powder
1 teaspoon Red Chilli Powder
1/2 teaspoon Garam Masala
2 teaspoons Lemon Juice
1 tablespoon Powder Sugar
1/2 teaspoon Cumin Seeds
2 tablespoons Coriander Leaves, finely chopped
1½ tablespoons + 3 tablespoons Oil
1 & 1/2 tea spoon sauf powder (बड़ीशोप)
Medium size 1 oninon finely chopped
Salt to taste 

Method:
Wash & dry bhindi. Ensure bhindi is complety dry else it doesn't become crispy. You can also use tissue paper to dry it.

Cut top & end of bhindi & put a fine cut in vertically in the middle to open it up. Remove all the seeds. Use our traditional pealer tip to remove the seeds. Bhidi should look like below.


Now start preparing the stuffing.
Dry roast gram flour in a kadai (pan) until light brown and nice aroma starts to come (approx. 4 to 5 minutes over low flame). Stir constantly in between. 

Transfer to same medium bowl.

Add rest of the ingredients mentioned above for stuffing. 

Mix it well. The stuffing looks like below.


Now fill the bhindis with the stuffing. Need to press the stuffing properly inside the bhindi, so that it will not come out while cooking.

Now take a non stick pan or kadhai & add some oil. Once oil is hot, add jeera, hing & finely chopped oninion. Saute for a while till onions turns the colour. Add haldi & some salt just to give taste to it. Stuffing already has salt so we need just a pinch here. Add remaining stuffing to it. 

Add the stuffed bhindi. Put the lid on & let it cook for 5 min. Now saute it to ensure bhindis are coated with the masala well. Again put the lid on & cook it for 10 min till bhindi is cooked perfectly.

Keep checking it between.

Now your Bharli bendi is ready. Serve it hot with fulka, paratha or nan. 





French toast with cheese

Quick healthy breakfast hope you all like it.

Ingredients:

Brown bread 6
Eggs 4
Cilantro
Oregano 1& 1/2 tspoon
Basil 1 & 1/2 tspoon
red chilli flecks 1/2 tspoon
salt to taste
olive oil
cheese slice
tomato sauce

Method:

Remove sides of bread & cut them diagonally half to form a tangle shape.
Separate egg white & yellow.
We will be using only egg white.
Put egg white into bowl & whisk it.
Add salt, Oregano , basil, chilli flecks, cut cilantro. Mix it well.
Keep non-stick pan on gas. Add little olive oil. Now take the tangle shaped bread slice & dip it into the egg mixture.
Put this coated bread slice on pan. cook it properly from 1 side.
Now flip to other side put small piece of cheese slice in the middle of the bread.
Put a lid on pan for 1/2 minute.
Remove the lid, the cheese slice must have been melted & bread must be cooked.
Remove it from pan.
Serve it with a small dot of tomato sauce on top of cheese..

Caramel Custard



This is an perfect recipe if you do it the way i am expalining below The Result will be the Same as the Attached picture taken by me  :)

Lets Begin Then

Ingredients

  • 1/2 liter whole milk ( gives rich Flavour )
  • 19 Tbs Sugar (Granulated)
  • 3 Tbs Sugar ( For Making the Caramel)
  • 3 Bread Slices ( Brown / White)
  • 3 Eggs
  • 1/2 Tsp Vanilla Essence .

Method :

Boil the milk ,cut of the heat and add 19tsp Sugar and 3 bread slices let the milk cool down a little  ,till then we can prepare our Caramel take the pan in which you plan to do the Caramel Custard its better to take the our Cooker Utensil to make the Caramel ( Caution :  As it is steel when you are making the Caramel be careful you can burn the Sugar more so be careful while making the Caramel ) add 3 tbs Sugar and few Drops of water and keep it on the Gas the Sugar water mixer will starts to Sizzle and form bubbles keep stirring with a spoon till you get Dark brown colour to the Mixer once the Dark Brown Color has come and the mixer is a Caramelised slowly with the help of tongs spread it evenly over the Utensil and let it cool down ,  post 15 mins use an electric blender / mixer to make a smooth paste of the milk , bread , sugar an semi thick liquid will be formed .
Take the 3 eggs Beat them well with an egg Beater add 1/2 tsp Vanilla Essence and mix well add this mix to the milk sugar bread and with an help of Egg Beater give a last mix to all the ingredients .

Pour this entire ready Mix to the Caramelised Pan and cover the pan with an aluminium foil on top .

Now take your Cooker (Remove the Whistle Very Important ) and pour some water say half cup at the base of the Cooker put in the pan in which we have prepared our Caramel.We will Steam the Custard for total 40 Mins . Turn the gas on the first 6 mins on High Heat ,then on simmer for 35 mins your Caramel Custard is ready .Remove it form the Cooker check with tooth pick  if it comes clean your Custard is done let it coll down for an hour to come to room temperature then refrigerate it for 3 hours .
Then take any Plate or An bowl in which you prefer to Serve the Custard .Remove the Custard pan from fridge and turn it upside down and your Caramel Custard is ready to Eat .............................:)

Reshmi Chicken kabab

Ingredients:
  • Boneless chicken cut into 1"cube -1/2kg
  • Marination:
    • 1/2 lemon juice
    • cashau, almond, khaskhas powder 1/2 cup
    • white paper powder 1 tea spoon
    • grated cheeze 2 cubes
    • butter 2 spoons
    • ginger garlic paste 3 spoons
    • salt per taste
Salad:
  • 1 oninon cut into circles
  • 1 cup cabbage shreded
  • chat masala
Method:
  • Mix all the ingredients of marination in a bowl.
  • Wash the chiken properly & then add in the bowl of merination.
  • Mix it well to ensure chicken is quoted well with merination.
  • Keep the merinated chicken in freeze for 4-5 hrs. the more you marinate the chicken the taste will be more.
  • Put the chicken on skewers & cook it on gas tandoor or normal coal based tandoor till the chicken is cooked properly.
    overlooking can make the chicken dry so its important to check in between to see if the chicken is cooked & its juicy inside.
  • serve these hot kababs with salad...& lemon..
