Doodhi diet dosa.

  • *Best known as "Bottle gourd" or "Lauki or Ghiya"

Ingredients:
  • 1 whole Doodhi (peeled and cubed)
  • ½ cup urad dal
  • 1 cup ukadiche tandool (par boiled rice)
  • 1 cup any fragrant rice ( Ambemore or Basmati)
  • 1 tsp fenugreek seeds
  • 1 cup jada poha
  • ½ inch ginger
  • 8 curry leaves
  • Chat masala as required
  • Salt to taste
  • Oil for cooking

Directions:

  • Soak urad dal, ambemore rice or any fragrant rice ,ukadiche tandool, jada poha and fenugreek seeds for a minimum of 8hrs. Since the batter needs time to rest after grinding its best to soak it in the morning. This way you can rest the batter overnight to ferment.
  • Grind the batter to fine paste. Add salt and put the batter to rest.Do not add too much water to the ingredients while grinding as it will get regular batter consistency after adding dudhi paste.
  • Add the below mentioned paste to the batter 1/2hr prior to your cooking. Steam the doodhi along with ginger, chaat masala, curry leaves and some salt for taste. Grind all these ingredients into a fine paste and set aside.
  • Add a little twist to this recipe by spicing   up your dosa batter . Add chopped coriander, green chillies (depending on the spice needed) and a hint of roasted jeera powder to steamed dudhi and grind .
  • Do not add water to dudhi while grinding as it is already high in water content. You could adjust the batter consistency later if needed.
  • The consistency should be like regular dosa  batter.
  • To make dosa I personally prefer iron pan or "Bida" but you could go for a not stick pan as well.
  • Season the pan with onion . Cut the onion into half and using some water run it over the pan while heating.This will pevent your dosa from sticking or getting burnt.
  • Drizzle some oil and spread  the batter evenly on your pan using a steel bowl. Drizzle some oil (optional). Flip sides. Cook second side. This dosa is more on a softer side so if you like it crispy then add some sugar to the batter.
  • Serve it hot with some green chutney .
